Healthy Peanut Butter Banana Sandwiches


Here is one of my favorite snacks that is both healthy and delicious. As you already know, there is a fine line between healthy and unhealthy foods. So, make sure you select the ingredients with care. That will elevate the flavor as well.

The ingredients are really basic: bread, peanut butter, bananas and olive oil or coconut oil. Opt for wholewheat bread or multigrain.

When it comes to the peanut butter, products that are only made from roasted peanuts and possibly salt, should always be the first choice. They are healthy, tasty and naturally oily too. Avoid any processed peanut butters with added vegetable oils and refined sugar.

Where I live in Thailand, there are many types of bananas which makes for a wonderful variety of flavors. But even if you're stuck with just one kind, keep in mind that bananas get softer and sweeter the more they ripen. That way, you can pick the bananas that are to your liking.

Extra virgin olive oil or cold-pressed coconut oil adds a beautiful richness to the peanut butter sandwiches. These oils are also considered to be among the healthiest.

Preparing The Sandwiches


Natural peanut butters are often more difficult to spread than processed ones. So, when you open a new jar of natural peanut butter, make sure you mix the contents well. Usually, the oil floats to the top while the solids settle at the bottom.

To make it even easier to spread the peanut butter, add a small amount of olive oil or coconut oil on the bread, on top of the peanut butter.

Then, it's just a matter of slicing the bananas. An average size banana should be enough for at least two sandwiches.

Serve with your favorite hot or cold beverage.
